I used the same amount of flour (3 cups) but instead of using all-purpose flour, I used spelt flour which is much better for you and easier to digest. I also switched the vegetable oil out for butter. I don't keep vegetable oil since it's not that fantastic for you, but I always have butter on hand. As for the sugar, yikes! Two cups is enough to make anyone become a diabetic with just one muffin (actually probably not, but hey, it is a lot of sugar!) I cut the amount down to 1 cup which I still think is a lot but oh well. I would usually use honey, but that was one of the things that I have run out of. I used the same amounts of everything else. Here is what my recipe ended up looking like:
3 cups Spelt flour
1 tbsp cinnamon
1 tsp baking soda
1 tsp sea salt
1 1/4 cup melted butter
3 eggs, lightly beaten
1 cup organic cane sugar
2 cups chopped peaches (I used canned and they turned out fine!)

Bella loved the muffins and now I have the wonderful smell of fresh baking in the house. The total time I spent in the kitchen was 20 minutes with 15 minutes baking time. A few of them burnt, but that was because my 3 month old and my almost 2 year old decided to both need my attention at the same time.
The best part of the recipe is that they suggest to pair the muffins with coffee. Done and done!

Looks delish!! I make a yummy peach cake and this seems like a portioned version of that :) By the way, kudos to you for even attempting baking with a 3 month old and an almost 2 year old - you are super woman!
