The Most Wonderful Cookie

I have come to the conclusion that there is nothing wrong with having a day where at the end of it, you simply sit down and enjoy a cup of coffee and a cookie without feeling guilty about any of it. Today is one of those days. I have never thrived on lack of sleep and lately it seems that's all I've been getting lately. A grumpy 2 year old and a teething 4 month old will do that for you. So, if you are in the same boat as me, this cookie recipe is for you. I have not changed it or altered it in any way because it is perfection just as it is!

Heidi actually pinned this recipe first and it just looked too delicious to pass up. Here is my confession. I am not a good cookie maker at all. I'm not quite sure what it is, either my oven or my lack of attention to details that are probably important in cookie making, but I either burn them or they are undercooked or on occasion, have no sugar or flour or other important component. These cookies actually turned out beautifully.


Now my only dilemma is what type of coffee to have them with! Enjoy!

  1. I made these the other day... what I like about it is that you do not need to have butter that has been sitting on the counter all day to make cookies!! They were delicious and didn't last the day...
