But unfortunately, it doesn't look like that is going to happen any time soon. I was browsing Pinterest the other morning and I came across this recipe for balls of energy. Balls of HEALTHY energy. That is exactly what I need. So on my last trip to the bulk food store, I got my ingredients and last night when I didn't want to do any more numbers or taxes, I set to work.
I changed the recipe from what she was suggesting just a tiny bit. Okay, maybe a little more than a tiny bit, but the premise is still the same. Instead of peanut butter, I used almond butter, which is actually much healthier for you. I also added just a little more of the almond butter since I was using more dry ingredients than she was. More like 3/4 cup - 1 cup. Because I find almond butter more sweet, I added less honey, more like 1/4 cup. For the extra ingredients, I added shredded coconut, dried cranberries, walnut pieces and flax seeds as well as ground flax seeds.
They are so easy to make and absolutely fantastic. Just sitting here and writing this, I have already eaten three. Apparently I need a lot more energy than I thought. If you're looking for something quick, easy and healthy (and really, who isn't?) try this recipe.

so funny you posted this - I made these on Sunday and will be doing a post soon! I stuck more to the original recipe...but I like your switching it up to almond butter (my preference, too). Did you have chocolate chips in yours??!?! I highly recommend!

I just made my second batch today and this time at your suggestion added chocolate chips as well. Yum! My husband who is allergic to peanuts won't try it since it tastes too nutty but Bella loves them! I keep mine in the fridge as well. On the second batch I put in even more almond butter and I found that it helped to keep them from getting too crumbly. Can't wait to see your post!
