Chocolate Chip Cookie Dough Cheesecake

 Are you drooling yet? If not, you should be.

If you have never made cheesecake before, get ready, because not only is this cheesecake delicious, it's beyond easy to make.

You will need: 

* 2 packages of cream cheese, softened (I used the No Name brand) 

* 1/2 cup of sugar

* 1/2 tsp of vanilla

* 2 eggs

* 3/4 cup prepared or refrigerated chocolate chip cookie dough, divided 

* A graham cracker crust (it can be either store-bought or homemade. I'll tell you how to make a homemade crust at the end. It is seriously the best.) 

Directions: 

Preheat oven to 350 degrees F. 

In a large bowl, using a mixer, mix the cream cheese,  sugar and vanilla until well blended. Add both eggs and mix until just blended. Taking part of the cookie dough (about 1/2 cup or half the cookie dough package), drop by spoonfuls into the batter and stir gently. 

Pour into the crust. Drop small, even spoonfuls of the rest of the cookie dough onto the batter. 

Bake for 40 minutes or until center is almost set. Refrigerate for 3 hours or overnight. 

If you decide to make your own homemade crust (and you won't be sorry), these are the directions: 

You will need: 

* 1/4 cup butter

* 1 1/4 cup graham crackers crushed into crumbs (in my case, I used chocolate covered graham crackers for a more chocolatey taste. Can't go wrong with more chocolate). 

  (You can use a ziploc bag and a rolling pin to crush your cookies. I also have used a potato masher to break them down into smaller chunks before using the rolling pin.)    

Directions: 

Preheat oven to 350 degrees F. 

Melt butter in a small saucepan and stir in crumbs. Press into an ungreased 9"x9" springform pan and bake for 10 minutes. 

Place in freezer to cool for a few minutes before pouring in your cheesecake batter. 

 You can be as creative with your crusts as you would like! I have used ginger snaps for a pumpkin cheesecake. Oreo cookies also make a great crust for chocolate cheesecake. 

 The only thing after that is to invite some friends over (so you don't end up eating the whole thing by yourself), make some coffee and get ready to eat a delicious and impressive, yet easy, dessert!
